Marination Creation & Mini Omelettes!

  Eating healthy and making the family eat it too!
  Tuesday nights creation...24 hr marinated chicken simmered with fresh green beans.  I then of course needed to add a side so I steamed some Yukon gold potatoes and then sliced them vertically and baked them for about 30 min at 350 degrees.  I of course didn't allow any toppings or sauces and insisted on them trying the food before trying to convince me into any additives of any sort.  BAM BABY!  It was a hit!
Last nights creation (Wednesday).  I made sort of like a random omelette muffin surprise...  Doesn't sound to appealing but it was delicious!  I baked these at 375 degrees for 15 minutes and then made steamed carrots while the mini omelettes were baking.  The mini omelettes were a combination of chopped up potatoes, bacon bits, fresh parsley, goat cheese and of course eggs.  The carrots on the side were steamed in water that was sprinkled with nutmeg, cinnamon and paprika.  Made another hit!  I am on a healthy and balanced meal roll people!
